Wild Venison Salami
Our venison salami is made using wild Fallow deer from Millbank Venison near Lockerbie. Wild Venison is one of the most sustainable meats around, super healthy & super lean. To prevent it from it drying out too much we’ve added some hand diced & cured back fat from free range pigs. We’ve kept the seasoning fairly simple in this cure with wine, whole green peppercorns and fresh garlic and rosemary which all compliment this really incredible meat.

Ingredients: Venison, Pork fat, Red wine (sulphites), Cornish Sea Salt, Dextrose, Garlic, Whole green peppercorns, Fresh rosemary, Sodium nitrate, Sodium nitrite.
