We use Cornish Sea Salt fine flakes in all of our charcuterie cures. It’s delicate and delicious and harvested from the pristine Cornish waters. The logical progression for us was to try smoking that too!

With wild garlic in abundance when the idea was born, we decided to try dehydrating that and adding it to the smoked fine flake. The result is incredible! It’s best used as a table seasoning but can be used for seasoning steaks, adding to creamy mash, or even sprinkled over the humble fried egg whilst cooking in the pan.

We’ve developed a bit of an obsession with the idea of flavoured smoked salt and dehydrating plum tomatoes and deseeded red chilli’s sounded like it could be a great flavour combination! When you open the jar you get hit by a punch smoky tomato aroma and when you use it on your food you get the sweet candy crunch and heat from the chilli. This is a beautiful seasoning on white fish and home made oven chips cooked in olive oil.
