We work with local regenerative farms to get the best pasture fed beef that has let the most natural life they can offer.

We use the beautifully marbled topside & silverside cuts and add a bit of our magic to compliment the taste of this excellent quality meat.

The cep powder adds a delicious earthy flavour, you then have a hit of peppery spice which is nicely finished off by a subtle floral note from the rose petals.

The next batch is due to be ready around the end of April. You can sign up to receive an email notification letting you know when they’re ready.

We entered this into the 2022 Great Taste Awards & were over the moon to receive two gold stars. the judges left us this amazing feedback.

“This looks absolutely delicious, thin, deep dark slices of the cured silverside with a rich distinctive aroma that you only get from bresaola. The flavour combination sounds intriguing - bold but interesting. On tasting it is quite an experience. You get the lovely stimulus of the meaty flavour and salt then a kick of pepper. As you chew you get the umami from the ceps then as you swallow a gentle perfumed note from the rose petal. The quality is superb - the meat succulent not dry and the flavouring extremely well judged. It is an extraordinary flavour combination but the texture, aroma and flavours are everything we are looking for. This is an extremely good product.”

“Very attractive Bresaola with great fat marbling throughout the slices and a fabulous savoury beef aroma. The soft flesh melts in the mouth giving an excellent mouthfeel, the rich urmani notes are giving clean beef flavour with the other ingredients bringing well judged further complexity to this very well made and delicious Bresaola - great beef that has been well used.”
