Organic Cider, Porcini and Thyme Salami
Another foraging expedition led to the conception of this salami. Four of our favourite flavours, pork, cider, porcini and thyme, give a lovely sweet but earthy quality. After discovering the oak aged cider from Steilhead Cider in Dumfries, this added even more depths of flavour.

We were over the moon to receive two gold stars at the 2022 Great Taste awards for this salami. Here’s some of the feedback from the judges.
“These beautiful pieces of salami look great with deep red colour and even amounts of fat distributed throughout. The smell is both herbaceous and earthy, making you want to dive in. The subtle porcini flavour adds a balanced earthy note and then the thyme comes through on the finish. The pork has good chew and the meat is moist. The flavour lasts and the salinity and seasoning are well-judged. The grinding of the spices works within the texture of the meat and the overall flavour profile is meaty, earthy, herbaceous with a little spice too. This salami is spot on.”
“The meat is very succulent, the marbling is wonderful, and there's a good balance between meat and fat. Evidently it is well produced and of a high quality.”
