This cure is packed full of wild flavours picked within a 3 mile radius of the smokery. We cure the trimmed pork belly using dried Elderberries, toasted Hog seeds & black pepper for roughly a week before it’s rubbed with mead and hand rolled and tied. It’s then smoked over oak & air dried for a minimum of 6 months giving it a deliciously fruity & smokey taste.. Perfect with baked brie, walnuts & honey.
