Lavender Cured Herdwick
We’ve developed this recipe using the leg muscle from older Herdwick sheep from Seatoller Farm who spend the majority of their lives foraging wild herbs and grasses on the Borrowdale fells where they are reared. Cured with lots of fresh thyme, lavender and juniper to really bring out the flavour of the mutton without either flavour overpowering.

This is a deep ruby red cure with some delightful herbal notes. It is very meaty, with great acidity and soft lamb tones on the finish. Texturally soft, it offers chew and a light bite. As you chew you release the unami and game notes. Not too dry, but not greasy either - harmonious in the mouth. Wonderfully well-balanced and quite delicious.
This is rich looking as well as on the nose. It is sweet and spiced, so juicy and tender. You get all those flavours of thyme, lavender and juniper - a rolling journey of meat and herbal flavours, with an extremely well judged cure and smoke!.
