This deliciously lean cut lends itself beautifully to the wild flavours of cumbria. With the fruity yet savoury flavours of Elderberry & the earthiness of the Cep, rounded off nicely with a hint of sweetness from the dried Ramsons leaves. It’s gently smoked over oak before being Air dried for 8-10 weeks. The finished cure is soft & creamy on the mouth
