Dexter Beef Salami with Wild Garlic

Our newest salami flavour has quickly become one of our favourites here at Stonehouse. It made with 80% beef and 20% free range pork. Working with the seasons, we’ve flavoured it with wild garlic and a little winter truffle. This is the first batch ever made so as with all our recipes, we’ve started light on the flavourings so as to get a good understanding of how the flavours are going to work without over powering the quality of the meat. We’ll definitely be making this one again but adding more truffle to make it even more decadent.
